Deglazing is adding liquid to a hot pan to dissolve the browned residue stuck to the bottom, then incorporating it into a sauce. It takes thirty seconds and is one of the largest available improvements to home cooking.

What that residue is. Those stuck-on brown bits are called the fond — French for base or foundation, which indicates how the technique is regarded. They are the concentrated products of the Maillard reaction between amino acids and sugars, plus caramelised sugars and rendered proteins.

They are, in flavour terms, the most valuable thing in the pan. Searing meat or browning vegetables deposits a substantial proportion of the developed flavour onto the metal rather than leaving it in the food. Washing the pan discards it.

Why liquid releases it. The compounds are largely water-soluble, and many are also alcohol-soluble — which is why wine works particularly well. Adding liquid to a hot pan and scraping lifts them into solution almost immediately.

How to do it:

Remove excess fat first if there is a lot, since the sauce will be greasy otherwise.

Keep the pan hot and add the liquid — wine, stock, beer, cider, vinegar, or simply water, which works perfectly well.

Scrape immediately with a wooden spoon while it bubbles. The fond lifts easily while hot and becomes stubborn as the pan cools.

Reduce to concentrate, then finish with butter, cream or mustard if wanted.

Practical notes:

Stainless steel and cast iron produce good fond. Non-stick deliberately does not — the coating prevents sticking, which prevents fond forming, which is the trade-off for easy cleaning. This is a genuine reason to sear in stainless.

Do not let it burn. Black fond is bitter and cannot be rescued; dark brown is what you want.

If deglazing with wine, cook off the harshness for a minute or two rather than serving raw alcohol.

It also makes washing up easier, which is the incidental benefit.
